One-Pot Greek Zucchini Rice

A one-pot Greek rice pilaf with zucchini, tomato and mint, finished with dill and lemon.
| 60 ml extra virgin olive oil | Heat oil until shimmering | Sauté onion 5 min | Swirl in zucchini 1-2 min | Stir in rice to coat | Add tomato, sugar, mint, hot water | Cover, simmer low 20 min | Off heat, stir in dill, salt, pepper | Cover, rest 5 min | Serve with lemon squeeze |
