| prepPreheat oven to 400°F / 200°C and line baking tray with parchment paper (baking method only) | ||||||||
| 1 (14–16 oz / 400–454 g) block extra firm tofu | Toss tofu cubes with oil & spices | Bake 400°F / 200°C, 20–25 min until crispy | Top with baked tofu, garnish & serve with rice | |||||

| 1 teaspoon kosher salt | ||||||||
| 1 teaspoon ground cumin | ||||||||
| ½ teaspoon garam masala | ||||||||
