Crisp-edged Greek fritters of grated zucchini, feta and fresh herbs, pan-fried in olive oil.
| 700 g zucchini, washed, not peeled | Grate zucchini, salt, rest 10 min, squeeze dry | Mix in feta, onion, herbs, eggs, pepper | Mix in bread crumbs | Stir flour & baking powder in | Dip in flour, fry medium-high 2 min | Flip, fry 1-2 min more, drain | Serve with lemon, yogurt |
