Simple Nigerian Jollof

A one-pot West African rice dish with beef, roasted peppers and tomatoes, and aromatic spices.
| 600 g beef, cut into chunks | Braise beef with salt, onion, curry, bouillon & thyme, 10 min | Add water, continue cooking 15 min until beef softens | Separate beef from stock; reserve stock | Fry cooked beef in oil until browned | Reduce oil, fry chopped onion a few minutes | Add tomato paste, fry 15 min until dark & grainy | Stir in blended pepper mix | Season with salt, bouillon, thyme, curry & bay leaf | Add beef stock & half the water, simmer 5–10 min | Add rice to pot, stir to coat in sauce | Add remaining water, cover with foil & lid | Cook on low or medium-low heat 35–40 min | Stir gently, fluff rice & serve warm |
