Peanut Butter Pork Noodles

Tender udon noodles tossed with seasoned pork mince in a silky peanut sauce, finished with chilli crisp and spring onion greens.
| prepFill a medium pot halfway with lightly salted water and bring to a boil | |||||
| 15 ml neutral-flavoured oil (peanut oil) | Heat oil 30 sec, add pork, break apart & sear 4–5 min until golden | Stir in spring onion whites & garlic | Add peanut butter, soy, vinegar & lime juice; break up peanut butter, add 2–3 tbsp boiling water, cook 2–3 min | Stir in chilli crisp, turn off heat | Transfer noodles to sauce, toss with spring onion greens until glossy |
