Miso-Glazed Fish

Pan-seared or broiled fish fillets glazed with a sweet-savory miso, mirin and sake reduction.

| 60 ml mirin | Boil mirin & sake 20 sec | Stir in miso & sugar, whisk until dissolved | Whisk in sesame oil, cool & transfer to bowl | Pat fish dry, brush with marinade, marinate 2–3 hrs | Broil or grill 2–3 min per side until browned | Finish in 400°F / 200°C oven 5 min if needed |
