Courgette, pea & pesto soup

A light, quick vegetable soup with courgettes, peas and cannellini beans finished with basil pesto.

15 ml olive oil	Heat oil, cook garlic & courgettes 3 min	Stir in peas, beans & stock, simmer 3 min	Stir in pesto, season & serve
1 garlic clove, sliced
500 g courgettes, quartered lengthways and chopped
200 g frozen peas
400 g can cannellini beans, drained and rinsed
1 l / 1000 ml hot vegetable stock
2 tbsp basil pesto or vegetarian alternative
