A classic Greek salad of fresh tomatoes, cucumber, peppers and olives dressed simply with olive oil, vinegar and oregano, topped with creamy feta cheese.
| 1 medium red onion, thinly sliced into half moons | Soak onion in ice water & vinegar, 10 min (optional) | Combine tomatoes, cucumber, pepper, olives & onion | Season with oregano, salt, oil & vinegar, toss gently | Top with feta & remaining oregano, serve |
