Cottage Cheese Cookies (Healthy Protein Cookies without Protein Powder)

Soft, chewy protein-rich cookies made with cottage cheese instead of protein powder, studded with dark chocolate.

| 160 g cottage cheese (4%) | Blend cottage cheese, vanilla & maple syrup until smooth | Beat in egg & blended cottage cheese mixture, 30 sec | Mix in flour, baking soda, baking powder & salt until just combined | Fold in chocolate chunks | Chill 30–60 min or overnight | Scoop into 10 large cookies, top with chocolate if desired | Bake 325°F / 163°C, 16–18 min until edges golden | Cool on baking sheet 15 min, transfer to wire rack |
