Chipotle Cilantro-Lime Rice (Copycat)

Fluffy basmati rice brightened with fresh cilantro, lime and lemon juice; a Chipotle-style side.

| 2 cups / 400 g basmati rice (unrinsed, or any long-grain white rice, rinsed) | Add rice, bay leaf, oil & salt; boil uncovered 10–12 min | Remove bay leaf, drain & rinse with hot water | Stir in cilantro, lime & lemon juice; season with salt |
