Brown butter cookies studded with chocolate chips and crushed Biscoff cookies, with optional cookie butter topping.

| 100 g / 3.5 oz unsalted butter | Brown butter in saucepan over medium heat | Pour into bowl, mix in cookie butter, chill 5 min | Whisk in sugars | Whisk in egg & vanilla | Fold in flour, baking soda, powder & salt | Fold in chocolate & crushed Biscoff cookies | Chill dough 30 min to 2 days | Scoop 3 tbsp portions onto sheet, spread apart | Top with cookie butter, chocolate & Biscoff (optional) | Bake 350°F / 175°C, 12–14 min until golden | Swirl bowl over cookies to round, rest 10 min | Transfer to wire rack to cool |
