Pistachio & Meyer Lemon Mousse Cakes with Mirror Glaze

Individual dome cakes layered with pistachio dacquoise, lemon curd, and silky mousse, finished with a glossy white chocolate mirror glaze.

| 1 teaspoon Meyer lemon zest (for the curd) | Simmer lemon juice, zest & sugar | Thicken with cornstarch slurry | Dissolve gelatin, whisk in butter & coloring | Freeze lemon curd in dome molds overnight | Assemble: mousse, lemon dome, dacquoise | Freeze assembled cakes 3 hrs or overnight | Unmold & invert cakes onto frozen sheet | Pour glaze over cakes, drip & scrape | Coat edges with pistachios, garnish | ||

| 1 3/4 oz / 50 g raw shelled pistachios | Trace 12 circles on parchment | Pulse pistachios, flour & powdered sugar | Fold in pistachio mixture | Pipe dacquoise circles, sprinkle & dust | Bake 8 min, reshape edges while hot | Bake 25–35 min more, cool in oven | |||||

| 6 tablespoons / 90 ml heavy cream | Heat cream, milk, vanilla & lemon zest | ||||||||||
