| 1 first-cut brisket (about 5 lb / 2.3 kg) | Rub brisket, wrap & chill overnight | Bake covered 300°F / 150°C, 3 hr | Turn brisket, pour half sauce, bake 2 hr | Uncover, bake until browned, 30 min | Rest 20 min, skim fat, reheat sauce & serve |
