Banana Chocolate Chip Cake

3 large eggs, separated	Beat egg whites to firm peaks			Fold in beaten egg whites	Spread half batter, layer cinnamon-sugar & chocolate chips	Dollop remaining batter, smooth top, sprinkle topping	Bake 350°F / 175°C, 35–40 min until set	Cool in pan, transfer & cut into squares
115 g unsalted butter, at room temperature	Cream butter & sugar until fluffy	Beat in egg yolks & vanilla	Add bananas & sour cream, alternate with flour mixture

400 g all-purpose flour	Whisk flour, cinnamon, baking powder, baking soda & salt

340 g semi- or bittersweet chocolate chips
100 g granulated sugar	Mix cinnamon & sugar for topping
1 teaspoon ground cinnamon
