Chewy cookies made with browned butter, dark chocolate chunks and semisweet chips, chilled before baking for structure.

| 140 g salted butter | Brown butter, cool to 32–34°C / 90–93°F | Mix cooled brown butter with both sugars | Add egg, milk & vanilla, mix until creamy | Fold in dry mix, then chocolate; chill 1–4 hrs | Scoop into 14 balls, space 3 inches apart | Bake 375°F / 190°C, 8–10 min until golden | Cool on sheet 2 min, transfer to rack, top with sea salt |
