Crockpot Sweet Potato Casserole

Tender sweet potato cubes baked in a slow cooker with brown sugar, cinnamon and butter, topped with melted marshmallows and pecans.

prepPeel and cut sweet potatoes into 1-inch cubes
300 g brown sugar	Stir sugar, butter, water, cinnamon & vanilla	Add sweet potatoes, stir to combine	Cook on high 3½–4 hr or low 6–8 hr, stir hourly	Stir in 2 cups marshmallows & ½ cup pecans	Sprinkle remaining marshmallows & pecans on top	Cover, melt on high 10–15 min	Uncover, cool 20 min before serving
