prepWash the baking potatoes and pat completely dry
prepPrick the skins all over with a fork
2 large baking potatoes	Microwave 4 min, turn, microwave 4 min, turn	Microwave in 1–2 min bursts until soft	Cool, rub with oil & salt	Bake 220°C / 200°C fan / gas 7, 10–15 min	Split open, add butter & serve
2 sheets of kitchen roll
1 tsp olive oil
pinch of salt
butter
