| 2 1½ pound boneless pork picnic roasts | Slice pork lengthwise into 4 pieces, place in bag | Whisk marinade, pour over pork, seal & marinate 8–24 hrs | Remove pork from fridge 1 hr before cooking | Remove pork from bag, reserve marinade, place on rack | Heat reserved marinade in saucepan over medium-low | Roast 15 min, baste with warmed marinade, roast 15 min | Stir honey into remaining marinade, baste pork | Roast 10 min until internal temp 145–160°F / 63–71°C | Broil 2–4 min until caramelized, watch carefully | Rest 15 min on wire rack, slice against the grain | Serve warm or room temperature, garnish & pair |
