Turkish Köfte (Meatballs)
Tender, juicy Turkish meatballs made with beef or beef-lamb mix, breadcrumbs, and a baking soda–lemon juice tenderizer; grilled, pan-fried, or baked with potatoes in tomato sauce.
| prepProcess stale bread into fine crumbs or measure store-bought breadcrumbs | |||||||||
| 1 kg / 450 g ground beef (or 70% beef, 30% lamb) | Combine beef, breadcrumbs, baking soda mixture, pepper & salt | Knead 4–5 min, throw mixture into bowl several times | Chill overnight (or at least 2 hrs) | Knead in grated onion with water until soft & playable | Shape into small ovals or cylinders | Grill or pan-fry 3–4 min per side until browned | Layer köfte & potatoes in dish, pour sauce over, bake covered 200°C / 400°F, 20 min | Bake uncovered 15–20 min until potatoes tender | |
