| 8 small (about 1.5 kg) RSPCA Approved chicken thigh cutlets, excess skin trimmed | Sear chicken skin-side down 3–4 min, turn 2 min | Nestle chicken into vegetables, scatter thyme | Bake 200°C / 180°C fan, 45 min until golden | Pour cream sauce over, bake 5 min more | Scatter with parsley, serve |
