| 7 large Granny Smith apples, peeled, cored and sliced into ½ inch slices | Toss apples with sugars, flour, spices & lemon | Spoon filling into crust, discard juices | Roll top crust, lay over filling, seal & vent | Brush crust with egg wash | Sprinkle sanding sugar, add foil shield | Bake 400°F / 204°C, 25 min with foil shield | Remove shield, bake 375°F / 190°C, 30–35 min | Cool at room temperature, at least 3 hours |
