Makes about 54–60 marshmallows
| prepSpray a 9×13-inch baking pan with nonstick cooking spray | |||||
| 1/3 cup / 40 g confectioners' sugar | Sift confectioners' sugar & cornstarch, dust pan | Cut into 1.5-inch squares, coat edges with sugar mixture | |||
| 3 Tablespoons / 24 g cornstarch | |||||
| 3/4 ounce / 21 g unflavored gelatin | Bloom gelatin in cold water, 1 min | Pour hot syrup into gelatin, whip on high 10–15 min | Add vanilla, whip 1 min more | Pour into pan, set at room temperature 6–48 hr | |
| 1/2 cup / 120 ml cold water | |||||
| 1 cup / 325 g light corn syrup | Cook syrup to 235–240°F / 113–116°C, 10–15 min | ||||
