A moist, tender banana bread made with vegetable oil instead of butter, with deep banana flavor and a tender crumb.

| 1 1/2 cups / 345 g ripe bananas, mashed | Mix bananas, oil, eggs & sugar | Stir in flour, vanilla, baking soda, powder, salt & cinnamon | Fold in chocolate chips or nuts (optional) | Pour into nonstick bread pan, smooth top | Bake 325°F / 163°C, 65–70 min | Cool in pan 10 min | Turn out onto cooling rack, cool 1–2 hrs |
