Banana Cake or Banana Bread

Makes one 9-inch loaf
| prepButter a 9-inch / 23 cm loaf pan and line the bottom with parchment paper | ||||||
| prepPreheat oven to 350°F / 180°C | ||||||
| 1 1/2 cups / 210 g flour | Whisk flour, baking powder, baking soda, salt & cinnamon | Whisk in sugar | Stir wet into dry until partially mixed | Fold in chocolate chips until just combined | Scrape into pan, bake 350°F / 180°C, 50–55 min | Cool on rack before removing & slicing |

| 3/4 cup / 150 g sugar | ||||||
| 2 tbsp / 30 g melted butter | Mix butter, egg white, egg, banana puree, sour cream, vanilla & espresso | |||||

| 1 large egg (at room temperature) | ||||||
| 1 cup / 250 ml banana puree | ||||||
| 1/2 cup / 125 ml sour cream | ||||||
| 1 tsp vanilla extract | ||||||
| 1 tbsp liquid espresso (cooled to room temperature) | ||||||
| 1/2 cup / 80 g chocolate chips | ||||||
