| 1 tbsp neutral-flavoured oil (peanut oil) | Heat oil 30 sec, add pork & salt | Sear pork 4–5 min until golden | Stir in spring onion whites & garlic | Add peanut butter, soy, vinegar, lime juice; emulsify with 2–3 tbsp boiling water, cook 2–3 min | Stir in chilli crisp, turn off heat | Transfer noodles to sauce, add spring onion greens, toss until glossy; add noodle water if needed |
