Mini Corn Dog Muffins

Bite-sized cornbread muffins with hot dog pieces baked inside; crispy outside, tender crumb.

prepPreheat oven to 375°F / 190°C
prepSpray mini muffin tin with non-stick spray
1/2 cup / 115 g melted butter	Whisk butter & sugar, beat in eggs & buttermilk	Whisk dry ingredients, fold into wet in 2 batches	Spoon batter into cups, place hot dog in center	Bake 375°F / 190°C, 8–12 min until golden
1/2 cup / 100 g sugar
2 eggs
1 cup / 240 ml buttermilk
1/2 tsp baking soda
1 cup / 160 g gluten free cornmeal
1 cup / 125 g gluten free baking flour blend with binder (or all-purpose flour if not gluten free)
1/2 tsp salt
8–10 all-beef hot dogs, cut into 1" bites
