Easy onion bhajis

Crispy Indian fritters of onions in a spiced gram flour batter, served with cucumber raita.
| prepSoak onions in cold water | ||||
| 2 onions, finely sliced | Sift flour & baking powder, mix in spices, chilli & water | Drain onions, fold into batter | Fry bhajis 3–4 min per batch, turning once, until golden | Drain on paper, salt lightly, serve with raita |

| 1 green chilli, deseeded and very finely chopped | ||||
| 100 ml cold water | ||||
| vegetable oil for frying | Heat oil 5 cm deep, test with batter speck | |||
| ½ cucumber | Peel & grate cucumber, squeeze dry, mix with yogurt & mint | |||
| 150 g Greek-style yogurt | ||||
