Homemade Orange Soda

30 min + coolingMakes 1 1/4 cups syrup

A bright citrus syrup made by steeping orange zest in sugar and juice, mixed with sparkling water to order.

240 ml freshly squeezed orange juice		Simmer with juice, 20 min + cool	Strain syrup, discard zest	Mix syrup & sparkling water, serve over ice
100 g granulated sugar	Massage zest & sugar until orange
2 tablespoons orange zest
2–4 tablespoons syrup per serving (from above)
Sparkling water, to top
