Easy Lemon Sugar Cookies

Tender butter cookies with bright lemon flavor, rolled in lemon sugar and baked until crackly.

| 1/3 cup / 65 g granulated sugar (for lemon sugar coating) | Rub lemon zest into sugar until fragrant | Scoop dough into balls, roll in lemon sugar | Bake 350°F / 175°C, 9–11 min until crackly | Cool on sheet 2–3 min, then on rack | ||

| 1 cup / 225 g butter, softened to room temperature | Cream butter, sugar & lemon zest, 3–4 min | Beat in egg, lemon juice & vanilla, 1–2 min | Fold in flour, baking soda, powder & salt | |||
