Buttery Vanilla Shortbread Cookies

Tender butter cookies with vanilla, rolled in coarse sugar and baked until pale golden.

| 227 g unsalted butter, at room temperature | Beat butter until creamy, 1 min | Add sugars & salt, beat 2–3 min until fluffy | Mix in egg yolks & vanilla on low speed | Mix in flour on low speed until just combined | Pat into rectangle, cut & roll into logs | Press sanding sugar onto log exterior | Wrap & chill 2 hrs or overnight | Slice into 1/2 in rounds, space 2 in apart | Bake 350°F / 180°C, 14–16 min per batch | Cool completely on pan |
