| 3 cups / 360 g all purpose flour | Whisk flour, sugar, yeast & salt | Add warm liquid & oil, stir until shaggy | Knead 8–10 min until smooth & elastic | Rise in greased bowl, covered, 90 min | Punch down, knead, roll & cut circles | Fold into half moons, seal & rest 30 min | Steam 10–12 min in batches |
