| 3/4 cup / 170 g salted butter | Brown butter, 5–7 min, cool to room temperature | Beat browned butter & sugars until fluffy | Beat in egg, egg yolk & vanilla | Whisk dry ingredients, fold into wet until combined | Fold in semi-sweet & milk chocolate | Scoop dough, chill 24 hr (or 1 hr minimum) | Bake 350°F / 177°C, 8–11 min until edges golden | Sprinkle sea salt, cool 5 min on sheet |
