Spiced beef meatballs baked with potatoes, tomatoes and peppers in a tomato sauce.
| prepPreheat oven to 200°C / 390°F | |||||||
| 1 onion, cut into quarters | Process onion, garlic & bread until fine | Add beef, parsley & spices; process | Add water & oil; process until combined | Shape into meatballs same size as potato | Assemble koftas, potatoes, tomatoes & peppers in tray | Pour sauce over koftas & vegetables | Bake 200°C / 390°F, 45–60 min |

| 500 g 2 oz ground beef (or half ground lamb) | |||||||
| 1/2 bunch parsley | |||||||

| 3 tbsp water | |||||||
| 1 1/2 tbsp olive oil (for the kofta) | |||||||
| 3–4 medium potatoes, sliced 2 cm thick | |||||||
| 2–3 tomatoes, sliced 2 cm thick | |||||||
| 2–3 green peppers, halved if thick | |||||||
| 1/2 tbsp olive oil (for the sauce) | Heat oil, stir in tomato paste 3–4 min | Add hot water, simmer 2–3 min | |||||
