| prepPreheat oven to 160°C fan forced / 320°F (for braising) | ||||||
| prepPreheat oven grill (broiler) to 200°C / 390°F (for finishing) | ||||||
| 50g dried ancho chillies | Toast chillies 30 sec–1 min, soak 20 min | Add soaked chillies to blender, blend until smooth | Pour chilli sauce into pan, add cinnamon & bay leaves, cook 3–4 min | Return beef, add onion & chilli steeping liquid, braise 160°C / 320°F, 3 hr 30 min | Rest 1 hr, shred beef, stir through sauce | Grill 1–2 min until cheese melts, top with birria, pico & crema, serve |
