| 75 g melted coconut oil or extra-virgin olive oil or high quality vegetable oil | Whisk oil & honey, beat in eggs | Whisk in bananas & milk | Whisk in baking soda, vanilla, salt & cinnamon | Stir in flour until just combined, fold in mix-ins | Pour into pan, sprinkle cinnamon, swirl if desired | Bake 325°F / 165°C, 55–60 min until toothpick clean | Cool in pan 10 min, turn out onto rack |
