Denver Steak with Spiced Wedges, Herby Salsa & Garlic Peas

| prepPreheat oven to 240°C / 220°C fan / gas 9 / 465°F | |||||
| prepLine a baking tray with parchment paper | |||||
| prepPull out a large frying pan and a small bowl | |||||
| prepWash produce | |||||
| 2 large potatoes, cut into wedges | toss wedges & shallots with oil, salt, pepper | roast 465°F / 240°C, 15–20 min | remove shallots; toss wedges in chilli paste | return wedges to oven 10 min until golden | slice steaks; plate with wedges, peas, shallot & salsa |

| 2 spring onions, cut into 3cm / 1-inch pieces | sauté spring onion, garlic, peas & water 4–5 min | ||||
| 1 garlic clove, thinly sliced | |||||
| 150g / 1 cup peas | |||||
| 1 tsp oil (for peas) | |||||
