| 10 tbsp / 140 g salted butter | Brown butter, cool to 90–93°F / 32–34°C | Mix cooled brown butter & both sugars | Add egg, milk & vanilla, mix until creamy | Fold in flour mixture & chocolate, chill 2–4 hr | Scoop into 14 balls, space 3 inches apart | Bake 375°F / 190°C, 8–10 min | Cool 2 min, transfer to rack, top with sea salt |
