Tender, flaky biscuits made by laminating cold butter into flour, then folding and cutting.

| 480 g all-purpose flour | Whisk flour, sugar, baking powder & salt | Work in cold butter until pea-sized pieces | Fold in milk until crumbly, turn onto floured surface | Laminate: fold, cut, stack & pat 4 times | Roll to ¾–1 inch, cut into rounds, freeze 20 min | Bake 425°F / 220°C, 20 min until golden | Brush with melted butter, cool on rack |
