Palak Paneer

| 12 oz / 350 g spinach | Blanch spinach 2–3 min, ice bath | Finish with kasuri methi & lemon juice, serve | |
| 1 medium tomato | Puree spinach, tomato, garlic, ginger, chili, cashews | Add spinach puree & water, simmer 10 min | |
| 3 large garlic cloves, whole | |||
| 1 inch / 2.5 cm ginger | |||

| 3 raw cashews, unsalted (optional) | |||
| 1½ tbsp / 22 ml oil | |||
| 2 large garlic cloves, finely chopped | Sauté chopped garlic 1–2 min | ||
| 1 large onion, finely chopped | Add onion, cook 2–3 min until soft | ||
| ½ cup / 120 ml water | |||
| ¾ tsp garam masala | Stir in spices, cook 1 min | ||
