A tender, moist loaf of creamed butter and sugar enriched with mashed banana, topped with icing and banana chips.
| prepPreheat oven to 180°C / 160°C fan / gas 4 | ||||||
| prepButter a 2 lb loaf tin and line the base and sides with baking parchment | ||||||
| 140 g / 5 oz butter, softened | Cream butter & sugar until light & fluffy | Beat in eggs & a little flour | Fold in remaining flour, baking powder & banana | Pour into tin, bake 180°C / 160°C fan, 50 min | Cool in tin 10 min, turn out onto rack | Drizzle icing & decorate with banana chips |
