| 168 g blanched almond flour | Sift powdered sugar & almond flour, pulse in food processor | Fold in almond flour mixture in 3 batches, macronage | Pipe 1-inch dollops 2 inches apart, tap pan | Rest 40 min until dry to touch; preheat oven to 270°F / 132°C | Bake 18–20 min, rotate 180° after 8 min, cool on sheet | Pipe filling onto half the shells, sandwich & refrigerate 1–3 days | |
