Chewy chocolate chip cookies with deeply roasted flavor from dulce de leche and brown butter, staying soft for days.

| 113 g / 4 oz unsalted butter | Brown butter in saucepan over medium heat | Pour hot brown butter into dulce de leche & brown sugar, stir to combine | Cool to 70°F / 21°C, then beat in egg yolk, vanilla, salt & baking soda | Beat in flour until just combined | Fold in chocolate chips & chunks | Scoop onto baking sheet, bake 375°F / 190°C, 12–14 min | Cool on baking sheet 5 min, then transfer to wire rack |
