A silky mascarpone-butter frosting swirled with fresh strawberry reduction, brightened with vanilla and cream.
| 360 g chopped fresh strawberries | Cook strawberries & sugar, medium-high heat | Reduce heat to low, stir often, 10–15 min until thickened | Transfer to bowl, cool completely (or chill 30 min) | Add vanilla, salt & cooled strawberry reduction, mix well | Add remaining confectioners' sugar if needed | Add heavy cream 1 tbsp at a time to desired consistency |
