| 100 g / 3.5 oz egg whites | Heat egg whites & sugar over double boiler until frothy | Whisk meringue on high, add remaining sugar & food coloring, 3–4 min | Fold dry mix into meringue until lava-like consistency | Pipe onto sheets, bang to remove air, air dry 15–30 min | Bake 300°F / 150°C, 13 min, turn halfway, cool completely | Pipe filling & sandwich macarons |
