Chocolate Mousse Cake

A light chocolate sponge base topped with silky chocolate mousse, chilled until set.
| prepPreheat oven to 350°F / 175°C | |||||||
| prepLine a 9" cake pan with parchment on the bottom only | |||||||
| 2 large eggs | Whisk eggs & sugar until pale, 3–4 min | Pour into pan, bake 350°F / 175°C, 12–14 min | Cool in pan 10 min, turn out onto rack | Line springform, place cake inside | Pour mousse over cake, spread evenly | Chill 4 hrs or overnight until set | Release pan, peel parchment, slice & serve |

| ⅓ cup / 43 g all purpose flour | Sift in flour, cocoa, salt & baking powder; fold | ||||||

| 300 g semi-sweet chocolate chips | Melt chocolate with 1 cup cream, 30s intervals | Rest ganache 5 min | Fold third of whipped cream into ganache | Fold ganache mixture back into whipped cream | |||
