Dense, fudgy chocolate brownies with melted dark, white and milk chocolate throughout, whisked with eggs and sugar until pale and airy.

| prepLine a shallow 20 cm square tin with foil or non-stick baking parchment | ||||||||
| 185 g unsalted butter | Melt butter & dark chocolate over hot water | Cool melted chocolate to room temperature | Fold cooled chocolate into egg mousse gently | Fold in sifted flour & cocoa gently until fudgy | Stir in white & milk chocolate chunks | Pour into tin, level the top | Bake 180°C / 160°C fan, 25–30 min until shiny crust | Cool completely in tin, then turn out & cut |
