Dal Tadka Recipe (Restaurant Style)

| prepRinse toor dal very well with lots of water, rubbing lentils with your hand; drain completely | |||||||||
| 1 cup / 200 g toor dal (split pigeon peas, or ¾ cup toor dal, ¼ cup moong dal or red lentils & 2 tbsps chana dal) | Pressure cook dal 3–4 whistles / 10 min | Lightly mash dal, adjust consistency | Merge tadka into dal, simmer 6–7 min | Stir in kasuri methi & coriander | Smoke dal with hot coal & ghee 3–4 min | Pour tadka over dal, garnish & serve | |||
